Mumm Napa Brut Prestige is a sparkling wine that originates from the renowned Napa Valley in California. The blend consists of 45% Pinot Noir, 45% Chardonnay, and 10% Pinot Gris/Pinot Meunier. The grapes are harvested by hand during the cool morning hours to ensure they arrive at the winery in pristine condition. Fermentation takes place at cool temperatures, primarily in stainless steel tanks, to preserve the wine's freshness and fruit intensity. A portion of the wine is aged in French oak barrels to add depth, complexity, and spiciness to the final blend. The finished blend undergoes a second fermentation in the bottle, with an average of 18 months of yeast aging, adding complexity and subtle bread dough flavors with 12.5% alcohol by volume (ABV). The wine is then disgorged, and a dosage is added to balance the acidity before aging for an additional three months on the cork to integrate the dosage fully.
